CÔTEAUX DU LAYON ROCHEFORT
Grapes : Chenin.
Terroirs : Beautiful terroir of green to grey sometimes crimson schist soils.
Harvest : Only by hand to select the best grapes ; in successive "tries", depending on the noble rot evolution and concentration maturity.
process : Very slow press all bunches, aging in tank on the lees.
Aroma and flavour: Yellow tint ; honey, citrus and exotic fruit ; sugar and acidity very well balanced for this digest wine.
Food pairing: Aperitif, fouace, melon, quail with grapes, duck with orange, duck breast with honey, blue cheese (Roquefort, Bleu d'Auvergne,...), roasted pineapple, apricot pie, tarte tatin, chocolate pancakes,...
Service temperature : 8 to 10°.
Aging: Easy to drink in its youth even if you can forget it several years in your cellar.

CÔTEAUX DU LAYON ROCHEFORT "CLOS PINGUET"
Grapes: Chenin.
Terroirs: Beautiful terroirs of green schistose shale with bench of Phtanites. This slope benefits from an exceptional sunshine.
Harvest: Only by hand to select the best grapes ; in successive "tries", depending on the noble rot evolution and the concentration maturity.
Process: Very slow press all bunches, aging in tank on the lees.
Aroma and flavour: Yellow ; honey, quince, citronella ; complex with a fine minerality typical of its terroir. Sweet but still fresh.
Food pairing: Aperitif, foie gras, white pudding with apples, roast pork with prunes, blue cheese (Roquefort, Bleu d'Auvergne), morbier, apple pie, cake with chocolate,...
Service temperature: 8° to 10°.
Aging: Drink it young or after 3 to 5 years of aging.

CÔTEAUX DU LAYON "VIEILLES VIGNES" ET "CUVEE MIRIFIQUE"
Grapes: Chenin.
Terroirs: Beautiful terroirs of altered green to crimson schist soil. Old vines aged more than 70 years.
Harvest: Only by hand to select the best grapes ; in successive "tries". We wait until an advanced maturity due to the noble rot.
Process: Very low press, aging in oak or acacia Barrel ("Cuvée Mirifique").
Aroma and flavour: Gold ; candied fruits, dry fruit, vanilla touch (oak aged) or honey ("Cuvée Mirifique").
Food pairing: Aperitif, foie gras. With a butter cookie, black forest, plum pie, chocolate cake, vanilla ice cream,...
Service temperature: 8° to 10°.
Aging: Whenever you want if kept in a good cellar.

Harvest: Only by hand.
Aroma and flavour: Greenish-gold colour ; nose : tropical fruit aromas ; palate : fruity, tropical fruit hints, dried fruits hints.
Food pairing: For the aperitif, goats cheese, blue cheese, chocolate desserts, ice creams and sorbets.
Service temperature: 7° to 9°.
Aging: Whenever you want if kept in good storage condition. You can keep it for three to five years in the cellar.
